Rhubarb Custard Pie
(an old New England recipe)

Ingredients:
Pastry for 9 inch, 2-crust pie
2 eggs
2 tablespoons milk
1 ยฝ cups sugar
3 tablespoons flour
ยฝ teaspoon nutmeg
4 cups cut up rhubarb
ยพ tablespoon butter

Directions:
Preheat oven to 400 degrees
In a large mixing bowl -
- beat eggs slightly and add in milk
- mix together and stir in sugar, flour, and nutmeg
- mix in rhubarb
Fill pastry-lined 9 inch pie pan with mixture
Dot with butter
Cover with lattice top
Bake 50-60 minutes, until nicely browned
